5 Healthy Meals You Can Make In Just 30 Minutes

 

The time for comfort food is over. And for once, I’m not complaining. It’s about time that the whole takeaway in bed with Netflix came to an end, and unfortunately, the weather isn’t cold enough to make that excuse anymore. So, I’m trying to give myself a little health kick, and experience different tastes! And for girls like us, who never have the time, I’ve compiled some very delicious, tempting meals we can all make in under thirty mins!

 Vegan Red Pepper Pasta

Prep time: 5 minutes 

This super tasty vegan pasta recipe substitutes meat for cheese, peppers, and olives. With the addition of pine nuts and chili, you can make it as hot and as varied as you like. Pesto Cauliflower Rice

Prep time: 10 minutes 

While this is technically called a ‘breakfast bowl’, I think this is perfect for dinner time. With cauliflower rice, kale pesto, avocado and an egg on top, you’re getting so many healthy foods plus some protein too. It’s the perfect mid-week dinner! Find the recipe here.

Prep time: Depends on the ingredients you use (20 min – 1 hour)

The prep time of this superfood bowl depends on the ingredients, if you’re cooking things like potatoes you’ll need to allow extra time, but if you want to keep it quick and simple you can throw together rice, chickpeas, cauliflower, kale and micro greens and miss out the sweet potato and other cooked options.   • I have heard about the cauliflower rice craze, but I haven’t seen anyone recommend adding pesto. That is a creative twist!
    I also love the idea of the Superfood Bowl. It is a good dish to make the night before heading to the grocery store when you only seem to have random foods left in your fridge/pantry. Thank for the inspiration!
