I’m never going to be that girl who cuts down the food she loves in order to get in shape. I am a huge foodie, and would rather work out five days a week to enjoy pizza, fries, and all the bread. But I know that healthy meals can be seriously delicious and take less time to prepare than a takeaway does, so I’m always looking for new recipes.
Want some inspiration for super quick healthy meals? Here are a few we love.
1. Poached eggs with spinach, mushroom and vine tomatoes
Yum! This lean recipe contains chives, nutmeg, vine tomatoes, spinach, portobello mushroom and a perfectly poached egg. It’s the perfect healthy meal when you have no time to cook and it could be just because I’m writing this article hungry, but this looks seriously good. Find the recipe here.
2. Vegan mushroom lasagne
Who doesn’t love a comforting slice of lasagne? I love it with a side of crispy salad. This recipe is vegan and gluten-free, the perfect healthy alternative to your happy lasagne. Substituting meat for mushrooms is genius! Find the recipe here.
3. Butternut Squash Noodles
Spiralized recipes are seriously easy, with the right spiralizer you can create noodles out of anything. Butternut squash noodles are quick, and in my opinion, taste mostly the same as pasta! This recipe is healthy and seriously tasty. Find it here.
4. Spinach soup
I love creamy, warming spinach soup with a little crusty bread roll. There is seriously nothing better when you get home from work with no time to cook. You can freeze extra so you always have a delicious meal in storage! Check the recipe here.

Those butternut squash noodles look unbelievable! That looks so good and even better now that I know how easy it is to make!
Whenever I don’t know what to cook I turn to your blog. Literally before every single dinner! Ahh I clearly can’t get enough of it and your recipes???
I’m a vegetarian as well but the only problem is I think I don’t get enough protein. I would love to eat more beans, and legumes in general but I’ve literally never cooked them when they’re dry. And I can’t seem to find any healthy canned options. Do you have a post how you prepare dry chickpeas or beans???

Looking forward to trying these.
On the spinach soup, I usually add a squeeze of lemon and a dash of cream (or coconut cream) – YUM!
