4 Super Healthy Breakfasts You Might Not Have Tried Yet

Although we’d love a stack of American pancakes every morning, the truth is we’d be ready for a nap by lunchtime and have to double our hours in the gym.

Breakfast is definitely the best part of the day, so you need something to revitalize you. So here are our favorite easy and healthy breakfasts to grab on the go with your morning coffee…

#1 Shakshuka

Shakshuka is definitely the kind of breakfast you can make in advance. It’s a mixture of eggs and tomatoes (can be made green by adding green vegetables) and takes less than half an hour to make.

In a skillet add 1/2 a cup of oil and brown 1/2 a chopped onion in it.
Add a clove of garlic, 1/2 a chopped onion and 1 medium chopped pepper to your mix and stir. After a few minutes add 4 cups of chopped tomatoes and 1 tbsp of tomato paste and let it simmer for 3 minutes. Season with paprika, cumin, salt, pepper, sugar and chilli powder to taste and then gently crack 4 eggs into it and cover for 15 minutes. You can eat as is or put in a box for tomorrow morning with a soft baguette.

#2 Sweet Potato Toast

Sweet potato toast makes a nice alternative to actual toast. It’s much better for you and I think it tastes a lot better too. Slice your sweet potato to a toast-sized thickness and put it in the microwave for about 2 minutes each side.

Then top with whatever topping you fancy! Try tuna and red onion, almond butter, and banana, or sliced avocado and lemon zest.

#3 Yogurt pops

If you’ve ever wished you can carry your breakfast with you to the bus stop, this is for you.

Get some popsicle molds and get creative. Some people like to make a ‘jam’ with fruit by simmering it and adding sugar and then layering it with fruit and granola, others prefer to slice fruit and add to the mold. This is your breakfast, your way. The essential ingredients are greek yogurt and fruit, everything else is up to you! All you have to do is create and add to the freezer for two days max. Breakfast-to-go!

#4 Zoats

The new, more fashionable alternative to porridge. Made using oats, milk and shredded zucchini. Heat in the microwave for 2-3 minutes and top with whatever takes your fancy! Peanut butter, chocolate, banana and bee pollen is the ultimate combination – thank me later.
