5 Deliciously Simple 5 Minute Summer Meal Ideas!

We’ve all been there; when you’re hungry but all you think you have time for is a piece of toast and butter!? Well it’s time to stop falling back on the easy-cook carbs, CGD have put together some gorgeous recipes that you can put together quicker than the grill can brown your bread.

Whether you’re tired from a long day at work, or only have 5 precious minutes before you have to run out of the door to get your train; one of these 6 super easy and deliciously simple 5 minute Summer meal ideas is sure to tickle your taste buds!

#1 Mediterranean Vegetable CousCous – One of my favourite go-to meals is a veggie couscous. You simply have to add a handful of couscous to a bowl, sprinkle on some olive oil and a little vegetable stock and seasoning then cover with boiled water. Whilst the couscous fluffs up slice half a pepper and a quarter of a courgette and griddle in a hot pan for a minute and a half on each side. Chop up your veg with some spring onions and sweetcorn then simply stir into your couscous bowl with a touch of mint to finish.

#2 Tasty Mixed Bean Salad – Beans are one the healthiest veg you can eat and have such a fantastic variety in taste and colour. A combination I love is cannellini, butter and black beans drained and mixed in with sweetcorn and blanched green-beans. Add a little red wine vinegar, chopped parsley and basil with salt and pepper to taste. So simple, delicious and extra healthy! You can even buy read-mixed beans to simply add your own dressing to.

#3 Green Smoothie Bowl – You do need a blender for this one, something like a nutri-bullet works great. Pre-freezing fruit is a fab way to preserve it as well as giving your smoothie a firmer texture and allowing it to be the ideal temperature. Have a go at blending half an avocado with 1 frozen banana, a handful of spinach, a handful of blueberries, spoonful of chia seeds and a touch of almond (or other dairy-free) milk. You can basically add anything you like to a smoothie bowl, remember to add a sweet fruit to stop it from tasting like pond water though! Check out this post for some mean green juice recipes.

#5 Spicy Mango Salad - Another cold salad for a warm Summers day. Chop up half a mango, 1 chilli, a handful of sugar snap peas, quarter of a red onion, half a bell pepper and grate 1 organic carrot over the top. To finish squeeze a fresh lime over the salad, sprinkle with roughly torn basil leaves and season to taste.

#6 Banana Omelette – You read right, a sweet omelette. This is a recipe I couldn’t believe would taste good until I dared to try it, and I’ve never looked back since! It couldn’t be easier, simply shop a banana into a frying pan with two eggs and a spoonful of honey. Mix thoroughly and cook on the hob just as you would with a normal omelette, flipping it half way through. Sometimes I add oats before cooking for a little extra goodness, and more honey if I’ve got a sweet-craving!

No theres no excuse to miss a meal because of time, everybody has 5 extra minutes!
