With #MeatlessMonday, Veganuary and the “vegan before 6 p.m.” routine being adopted by many, people have become far more open to the idea of a vegan diet. With even Beyonce taking on the vegan challenge, it’s being proved to have a great impact on the environment and even our health too it’s definitely something that we should consider trying.
That doesn’t mean to say you have to change to be vegan immediately. You could start by giving some of these vegan recipes a try. Whether you are fully vegan, or just looking to cut down your meat/dairy intake, these are some super healthy dishes that taste amazing, too!
1. Vegan burger
You don’t have to sacrifice a delicious burger to go vegan. This one is vegan, dairy-free, eggless, soy-free, nut-free, low-fat, and without the bun gluten and grain free. The burgers themselves are super simple, just using chickpeas, sweet potato, and sundried tomato. Find the recipe here.
2. Garlic Mushroom Spaghetti
Who doesn’t love Italian food? Creamy, comforting pasta with garlic and mushrooms really hits the spot. It’s so good you won’t believe it’s vegan. Find the recipe here.
3. Red Thai Curry
With there being absolutely no sign of it getting any warmer (we can’t be the only ones bored of winter!?), a creamy vegan coconut curry will hit the spot. It’s full of vegetables and will seriously warm you up. Find the recipe here.
4. Sweet potato and chickpea buddha bowl
This buddha bowl is hearty, healthy and it only takes 30 minutes. It’s loaded with vegetables, chickpeas and a maple-tahini sauce. Yum. Find the recipe here.
5. Spanish beans with tomatoes
This is the perfect tapas recipe served with crusty bread and falafel bites. They’re smokey, bursting with flavor and the perfect vegan alternative to a normal tapas spread. Plus, meat-eaters can add chorizo for an extra flavor. Find the recipe here.
