Yes, we’re back again with another round-up of healthy and delicious meals. Recently I’ve had to start taking meal prepping quite seriously and making a list of the kinds of meals I would realistically be able to prepare myself. Getting home late isn’t an excuse to eat bad food, although I’d love to use it as one, it’s actually all about high-quality food that doesn’t break the bank and takes less than thirty minutes to make!
Check these recipes out for inspo…
1. Pumpkin, Spinach, and Walnut Spaghetti

The nicest thing to come home to after a busy day is a big comforting bowl of spaghetti. It might not feel like the healthiest meal in the world, but this recipe upgrades it with spinach, pumpkin, and walnuts. It’s warming, comforting, and not too heavy! Find the recipe here.

2. Roasted Garlic and Leek Soup

For a light bite, you can prepare ahead, this tasty roasted garlic and leek soup hits all the right spots. It’s so moreish thanks to the sweet potato, garlic, and tomatoes. You’ll want to save this for the rest of the week and might even want to take it into the office. Find the recipe here.
3. Grilled Salmon with Rocket and Avocado

You can’t get much healthier than grilled salmon. It’s full of omega oils that help you stay healthy and make your skin look good. All you need for this recipe is pine nuts, avocado, rocket and balsamic vinegar. Find the recipe here.
4. Shrimp Cauliflower Mash with Roasted Kale

Yum yum! Lightly spiced shrimp with cauliflower mash and garlic kale is a seriously healthy meal but tastes too good to be! You need to try this, find the recipe here.
