5 Perfect Breakfast Ideas For Busy Girls

The thought of prepping breakfast, lunch, and dinner does not fill me with joy. I’m not really a domestic goddess, so while I’ll be splitting cooking duties with my boyfriend in our new house, I do want to prepare my breakfasts in advance and actually eat something healthy and filling before I dash out the door.

With that in mind, here are a few easy and quick breakfast recipes you really can’t miss. They’re healthy, simple and (most importantly!) fast.

1. Apple Cinnamon Overnight Oats

The clue is in the name with these creamy overnight oats. You need five minutes after your dinner (or while you prepare it) to put this breakfast together and keep it in the fridge overnight. It has six ingredients and is vegan, vegetarian and gluten-free, plus it’s free from refined sugars and tastes like dessert. Yum! Find the recipe here.

2. Quick and easy vegan French toast

Thanks to Instagram, French toast is exactly the kind of breakfast I imagine having in a penthouse apartment with a huge newspaper spread over the bed and a cup of milky tea (or black coffee). But you’d be surprised at how quick and easy this breakfast is. It takes just ten minutes to make and it’s perfect for a Sunday morning. Find the recipe here.

3. Earl Grey Blueberry Oatmeal

There’s nothing better than a bowl of oatmeal in the morning. You can even prepare it ahead and bring it in a jar to heat up when you get to the office, as long as you’ve got fruit in the fridge and are willing to prepare it. This super easy Earl Grey oatmeal takes 15 minutes to make and tastes like heaven. Find the recipe here.

4. Blueberry Coconut Smoothie

When you’re really pushed for time, a breakfast smoothie you can run out the door with is the perfect choice. All you need to do is blend and layer the ingredients together and put them in a freezer for 15 minutes, you can make this ahead and just grab it to go! Perfect. Find the recipe here.

5. Green Pesto Avocado Toast

If you don’t have a sweet tooth in the morning, you should try a toast recipe that only requires slicing and assembling. Eat it while you watch the news or scroll your Insta feed, combining pesto and tahini with beloved avocado takes this toast to the next level. Find the recipe here.
