A healthy balanced diet is all about putting in all the right nutrients to fuel your body and getting a good balance of vitamins, minerals, protein, fats etc. etc. Now more than ever, good fats are getting great press…and what better food to eat to tick that good fats box than the avocado pear!
If you love avocados but are getting a bit tired of just spreading them on a piece of toast, here are eight great ideas for getting your avo fix!
#1 Spicy Avocado Egg Bake – This is number one because it’s my absolute favourite! Cut your avocados in half, crack an egg into each section, top with chopped chillies and paprika then simply bake in the oven until cooked. Yum.
#2 Avocado Mango Salad – Another simple and delicious combo. Simply combine equal quantities of chopped chunks of avocado and mango with your favourite salad leaves and dress with a lemon juice and olive oil mix. Season to taste and tuck in.
#3 Avocado Fajitas – Since becoming a veggie this dish has been my saviour. I regularly make chicken fajitas for my flat mates and love the spices and smells that fill the kitchen. So that I can join in on the fun I simply adapt the usual fajita recipe by cooking up onions, peppers and mange tout in fajita spices, then add sliced avocado into my wrap at the end rather than cooked chicken! Delish.
#4 Sushi Roles – Career Girl Confession: I’ve never made sushi at home. I have now tried it though, and an avocado California roll is just to die for. You can generally pick up all the bits you need for home made sushi in the supermarkets now, so switch out the fish for avo and you’ve got a tasty little veggie treat on your hands! Adding pickled ginger takes it to a whole other level!
#5 Avocado Feta Omelette – So this is another staple of my veggie diet. Cook up your eggs in a frying pan, top with slices of avo and crumbled feta then pop it under the grill for a couple of minutes or until crisp on top. Simple, quick, divine.
#6 Smoothies – Now I never imagined avocado as a drink, but when blended up with a banana, milk and a touch of honey it makes the most delicious and creamy smoothie you’ve ever tasted. Try blending with green veggies to make a healthy breakfast or sweet fruit for a tasty desert.
#7 Spicy Bean Wraps – For a taste of Mexico cook up some kidney and black beans with tomatoes, paprika and chillies. Slather the beans onto a tortilla wrap and add mashed avocado and crunchy lettuce.
#8 Guacamole – Home made guac is the best in the world and just so easy to do! You hardly need any of the ingredients you see in the shop bought stuff to make it super tasty. Mash your avocado and add whichever veggies or spices you fancy! I add sweetcorn, chillies, onion, tomatoes and coriander to mine. Maybe it’s not authentic guac but it sure tastes good!
