We all want to be as healthy as possible this year, and if you started out well in January, now is the time that our healthy habits might be broken. It’s hard to remember to grab healthy meals, and sometimes when you leave work in a lunchtime rush you end up grabbing something unhealthy.

Luckily, this easy, delicious soup is perfect for prepared lunches and quick dinner in the evenings, it’s warming, rich, and tongue-teasingly delicious and it’s safe to say was a huge hit at CGD HQ, even the models loved it which shows you how healthy it is! Here’s how you can make your own…

Career Girl Daily Carrot Soup

Super Simple Carrot Soup

2 tablespoons coconut oil
1 onion, chopped 
1 tablespoon of red curry paste 
12 carrots peeled and chopped
1 can of full-fat coconut milk
360 ml of water 
1 lemon or lime 

to serve: chopped parsley, toasted pumpkin seeds or almonds.

 

It’s easy, trust us! 

Put your soup pan on medium-high heat, add coconut oil and chopped onions and stir until they’re browned. Add the carrots and allow to cook for a few minutes before adding the coconut milk, and water which will help the carrots to go soft. Add the curry paste, and some salt and pepper and then allow to simmer for 10 – 15 minutes, checking that the carrots are soft. Once the carrots are soft, blend the soup and then season to taste with more salt and pepper. Decorate your soup with chopped parsley and toasted pumpkin seeds for an extra crunch!

Serves 4 (more if using mugs like our girls)
