Sometimes, being a busy career girl can mean that you’re stuck with last-minute meals that aren’t always exactly healthy. So, for the new year, I promised that I would make more of an effort to cook more and eat the foods that can give me the most energy! But, after a long day at the office, I don’t want to have to cook a three-course meal. So, a quick and easy recipe that I can make in under 30 minutes is a must! And knowing that there a lot more busy women out there like me, I’ve decided to share with you these easy recipes for you to make at home too:
1. Vegan Spring Rolls:
These are technically called ‘Vegan Summer Spring Rolls’ but I can’t wait for the sunny season to enjoy them! And there’s only so many hotpots a girl can eat! Delicious and easy to make this dish is one of my favorites! And when tofu bakes, it is transformed completely! It becomes full of flavor that is exaggerated by the mango sauce on the side! Find the recipe here.
2. Prawn Teriyaki:
I must admit, the last time I had this meal my friend cooked it for me and I absolutely loved it. It’s super easy and quick to make, not to mention delicious. And if you love Japanese food then prepare to get excited, because now you can make it at home! Find the recipe here.
3. Sicilian-Style Salmon with Garlic Mushrooms:
Turns out you don’t to go to Sicily to do this dish right. The recipe will help you to make a delicious twist on your usual fish dinner. Spicing up your salmon is the best way to go, as salmon on its own is a superfood that is not only healthy for you but helps you to perform at your best! Find the recipe here.
4. Morrocan Chicken Flatbread:
Be eccentric with your food choices and try to cook something you usually wouldn’t, you might actually be surprised to find out that you like a lot more things than you originally thought. And that’s how I discovered my love for Moroccan chicken! Find the recipe here.
5. Chicken and Avocado Burritos:
I love avocado, it’s so light and works with almost anything! Especially with chicken! And instead of doing your usual burritos why not try this one with a twist? This one is tasty and good for you, which means you can enjoy your meals and stay on track with your fitness goals too! Find the recipe here.
6. One Pan Cod With Chorizo & Chickpeas:
Cheer yourself up with this colorful dish! Cod is one of my favorite fish dishes to eat and I’ve never seen it look so good! So, instead of mixing your cod with chips and mushy peas try this lighter version that’s sooo good! Find the recipe here.
7. Halloumi Fries:
If you fancy a little bit of indulgement then cook this, it will fill that need for something more whilst not being completely awful for you! They’re a better alternative to fries and they’re delicious! You’ll definitely be impressing all your friends with this dish. Find the recipe here.
8. Prawn Stir-Fry:
I love anything to do with prawns, they’re delicious and easy to include in any dish. Rather than just having noodles, you can make your meal have a little more sustenance and more vibrant by just including this simple ingredient! And voila, you have a quick and easy dinner! Find the recipe here.
9. Sriracha Almond Crusted Pork Chops:
If you like you have an inner chef this is one to really show off your skills with. It doesn’t actually take up that much time to cook, but getting it right is risky business! But it’s delicious and different! Who’d have thought pork and almonds taste so good? Find the recipe here.
10. Honey Mustard Chicken & Potatoes:
I love anything a little sweet, so honey is obviously a favorite of mine! And the honey will really make the chicken taste like you’ve never tasted it before! It really enhances the flavors and will probably be the tastiest recipe of them all! Find the recipe here.
